I think in general AMD's opens source driver is so close in gaming and so hassle free that you should go with that, the pro driver does have few specific wins but they are mostly on pro apps.
For tweaking, you must use command-line parameters for various tasks. As said xrandr for tweaking resolutions and refresh rates.
For 3D settings there are these environment variables:
vblank_mode=x (sync refresh 0 or 1)
R600_TEX_ANISO=x (anisotropic filtering 0-16)
GALLIUM_MSAA=x (Antialiasing level - but this does not work for amdgpu 0-8)
pp_jimenezmlaa=x (Morphological AA values 0-32)
