Kingdom Come: Deliverance 2

I hope its more accessible, the first one I have tried a couple of times but never finished. Liked the concept and immersion but was just a little too hard for me.
 
I loved the first one (though your right Thr0tt, it could be unforgiving) and have high hopes for the sequel.

If I remember right, what really helped me was watching or reading a beginners guide. Because you are 100% right, the learning curve is very steep and the game does a pretty poor job explaining things. Leaving it mostly instead up to players to figure it out... which is cool... but also meant I did the same thing of playing for abit and then walking away till I followed a guide.
 
The 1st game was good, and the quests didn't hold your hand like Skyrim. Combat (on Xbox controller) never felt right with multiple enemies and one on one was too repetitive, but I mainly just used long sword all the time. I hope they improve both as it had lots of potential,
