Default Performed my first cook with the new pellet grill...

So I bought Camp Chef Woodwind Wifi 24 pellet grill the other week. I had my first cook today.

Grill: 225 degrees with smoke level at 7 using Lumber Jack cherry pellets

1) Patted down ribs with paper towel
2)Trimmed/cut off the ends of the rack leaving 10 bones per rack (used these pieces later for mac n cheese)
3) Rubbed the ribs down with yellow mustard for a binder
4) Sprinkled some Heath Riles cherry rub on both sides of the ribs and patted (not rubbed) them down
5) Let them sweat for 20 min
6) Put them in the grill and spritzed them every 45 min with 50/50 mix of apple juice and apple cider vinegar
7) At the 3 hour mark I wrapped the ribs meat side down in foil with a bath consisting of Parkay, honey, brown sugar, some of the rub previously used, and apple juice and cooked for 1.5 hours. (the temp was already getting high, I had planned on 2 hours)
8) The last 45 min (I had planned an hour) I let the ribs cook unwrapped and removed at 208 degrees
9) I let them rest (wrapped in foil) for 20 minutes.

They turned out great. Juicy, tender, and with a good bite but still pulled off the bone clean. Probably the best ribs I have had at home.

The only issue I had (as a first cook newbie) was trying to follow a 3-2-1 timeline. Due to this I had to adjust my times down the line after the initial 3hr portion of the cook. I am thinking a 2-2-1 might work better.

Correct. All rub, no sauce. Personal preference. I had some medium heat Jimmy J's Razorback Rib Sauce that my gf used after the fact.

I've been interested in getting one of these. I use a weber kettle for grilling and smoking, but I would like to have something like this for smoking duties, and use the weber for normal use.

May have to pick one of these up this fall. My problem is my wife doesn't care for grilled food, let alone anything smoked, so it's hard for me to justify getting one, if myself and my oldest daughter are the only ones eating the stuff I make on it.

I mean she's a fantastic mom, beautiful, gets my jokes, etc, but she doesn't like "the smoky flavor" as she says. I guess there is no such thing as the perfect woman.

I agree. However, a guy I knew once boiled his ribs in apple juice. Too bad they were St. Louis style, not my fave, so it was hard to tell.
